Traditional Tuna Recipe “Ambulthiyal

Skipjack tuna Ambulthiyal fish is a delicious type of fish preparation. With or without origins in Southern Sri Lanka, Sri Lankans still enjoy delicious ambulthiyal malu whenever a special occasion occurs. There is the traditional way of preparing this and there’s the earlier, also there is the more modern way do it. Today we do it the traditional way

Ingredients

  • skipjack tuna( Balaya Malu) 500g
  • 5 pieces goraka
  • 1 1/2 inch piece cinnamon
  • 8 or 10 10 curry leaves
  • 1-2 green chillies
  • 1  piece of ginger
  • Salt – as needed
  • 2 green cardamoms
  • banana leaf 

Prepare

1. Add goraka to a saucepan of warm water and leave until soft

2. Clean the fish and cut the fish into big pieces ,and wash it

3. Add a piece of banana leaf to the bottom of a clay pot.

4. Remove goraka from hot water and grind all the ingredients together into a paste including goraka, Once the ingredients are grinded together, add some water and prepare this in a thick creamy paste.

5. Drop a layer of curry leaves on top of the banana leaf (or even into the pot). Then add a few goraka spoons and pepper paste over it. Then add a layer of bits of fish with no splitting. Attach the goraka and pepper paste over and attach any remaining fish after this paste coat. A top the tuna,

6. Cook the fish over medium heat until dry or thick
